To Make Gluten-Free Banana Breakfast Bars, You Will Need These Ingredients:

  • Lg ripe banana ~ just barely ripe for Low FODMAP diets
  • Natural peanut butter ~ or any other nut butter, or use a sunflower seed butter for nut-free diets.
  • Lg egg
  • Pure maple syrup or honey
  • Vanilla extract
  • Gluten-free oat flour
  • Baking powder ~ corn-free if needed
  • Hemp seeds
  • Semi-sweet mini or regular-size allergy-friendly chocolate chips ~ I used mini.

This recipe will make nine breakfast bars, each providing 5 grams of protein. If they last long enough, these breakfast bars freeze great in a quality freezer container.

Ingredients

  • 1 Lg Ripe banana ~ just barely ripe for Low FODMAP diets
  • 1/4 cup Natural peanut butter ~ or any other nut butter or use a sunflower seed butter for nut-free diets.
  • 1 Lg Egg
  • 1/4 cup Pure maple syrup or honey
  • 1/2 tsp Vanilla extract
  • 1 cup Gluten-free oat flour
  • 1/2 tsp Baking powder ~ corn-free if needed
  • 1 tbsp Hemp seeds
  • 1/3 cup Semi-sweet mini or regular-size allergy-friendly chocolate chips ~ I used mini.

Instructions

  • Preheat oven to 350 F
  • Line an 8-inch square pan with parchment paper.
  • In a medium bowl mash banana.
  • Add peanut butter and mix well.
  • Add egg, pure maple syrup, and vanilla extract. Mix well.
  • Stir in flour, baking powder, hemp seeds, and chocolate chips. Stir to combine all ingredients.
  • Pour into prepared pan and bake for 19 minutes.
  • Test with a toothpick in the center of the pan; the toothpick should come out clean except for maybe a little melted chocolate chip.
  • Enjoy warm or at room temperature.
