Flourless Chocolate SunButter S’mores Cookies are scrumptious gluten, peanut, corn, and dairy-free sensations. The chocolate SunButter is less rich than some, resulting in a perfectly mild chocolate-flavored cookie.

If dairy isn’t a problem adding a couple of Reese’s pieces to each cookie is fun, otherwise, add some extra chocolate chips to the dough or on top of each cookie before baking. Peanut-free would also of course need to add extra chocolate chips instead of Reese’s Pieces.

Ingredients

  • 1 cup Chocolate flavored SunButter
  • 1 large egg
  • 1 tsp Vanilla extract
  • 1 cup Brown sugar
  • 2 Tbls Collagen powder plain flavor
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 cup Mini Marshmallows
  • 1/2 cup Mini semi-sweet chocolate chips
  • Optional Reese’s Pieces
  • Optional 1-2 tbsp sunflower flour or oat flour for a thicker cookie

Instructions

  • Preheat oven to 350-degrees F
  • Line a baking sheet with parchment paper or a silicone liner
  • In a mixing bowl cream together SunButter and brown sugar.
  • Add egg and vanilla and mix well.
  • Stir in collagen, baking powder, and baking soda.
  • Fold in marshmallows and chocolate chips.
  • Make cookies using 2 tbsp of dough, making sure several marshmallows are in each cookie. You will need to push together the dough, stuffing the marshmallows as best you can because the dough is more oily than sticky. Everything will mesh together when the cookies bake.
  • Bake cookies for 10-11 minutes. Remove cookies from the oven and let them rest for about 5 minutes before transferring to a wire rack.
