Magic Peanut Butter Energy Balls

Magic peanut butter energy balls are deliciously soft and easy to bite into. If you use sweetened coconut, the energy balls will be easy to bite into, even when frozen. I’ve had a lot of energy balls, but these are the all-time winners. Oddly enough, I created this energy ball one day when I thought, “I wonder what my two favorite recipes would be like combined?”

Since this is now my all-time favorite energy ball, I haven’t substituted any ingredients or altered amounts. Still, you could certainly substitute sunflower seed butter for a nut-free ball.

For a vegan magic peanut butter energy ball, replace the honey with pure maple syrup.

To make magic peanut butter energy balls, you will need these ingredients:

  • Peanut Butter ~ Regular (like Jiff) and natural peanut butter (like Adams that requires stirring). I use both types in this recipe
  • Honey
  • Pure maple syrup
  • Vanilla
  • Unsweetened or sweetened coconut
  • Old-fashioned oats ~ gluten-free oats if needed
  • Quick cooking oats ~ gluten-free if needed
  • Corn flakes ~ I used a gluten-free low/no sugar cereal.
  • Corn chex cereal
  • Mini semi-sweet chocolate chips ~ I used Enjoy Life Allergy-Friendly
  • Optional Allergy-friendly candy-coated chocolate candies or M&M’s.

This recipe makes a large batch of energy balls, about 42-45. I prefer to make bigger batches less often. These should be stored in the refrigerator or freezer.

Ingredients

  • 1 + 1/2 cups Peanut Butter ~ Regular
  • 1 cup Natural peanut butter ~ the kind that requires stirring I use both types in this recipe
  • 1/2 cup Honey
  • 1/2 cup Pure maple syrup
  • 2 tsp Vanilla
  • 3/4 cup Unsweetened coconut
  • 1 cup Old-fashioned oats ~ gluten-free oats if needed
  • 1 cup Quick cooking oats ~ gluten-free if needed
  • 3 cups Corn flakes ~ I used a gluten-free low/no sugar cereal.
  • 2 cups Corn Chex cereal
  • 3/4-1 cup Mini semi-sweet chocolate chips ~ I used Enjoy Life Allergy-Friendly
  • 1/3-1/2 cup Optional Allergy-friendly candy-coated chocolate candies or M&M's. I just stick a couple of candies in each ball.

Instructions

  • In a very large bowl add peanut butter, honey, and pure maple syrup. Mix thoroughly. Add vanilla and coconut and mix thoroughly.
  • Stir in all oats, corn flakes, Chex cereal, and chocolate chips. Mix well. I put on gloves and use my hands.
  • Form balls with about 2 tablespoons of mixture. Store in the refrigerator or freezer.
