Easy Microwave Peanut Brittle
Easy microwave peanut brittle is just like it sounds…easy! You basically have to stir the ingredients a few times and pour them on a cookie sheet to cool. No kidding and the recipe only takes a few basic ingredients that you might even already have in your cupboard.

This easy peanut brittle will only take you about 8-10 minutes to make, and here’s the best part: You won’t need a candy thermometer. I seriously love that!
To Make Easy Microwave Peanut Brittle, You Will Need These 7 Ingredients:
- Unsalted roasted peanuts ~ cashews are yummy too.
- Granulated sugar
- Light corn syrup
- Salt
- Butter
- Pure vanilla extract
- Baking soda
The peanut brittle needs to cool before breaking into pieces to eat. Waiting is hard! If you are like me and just can’t wait even 30 minutes, pop it in the freezer. That will cool it down fast, so you can be munching and crunching in no time at all.
Store peanut brittle in an airtight container to keep it fresh and crispy.
If this peanut brittle wasn’t already super hard to resist, I had some leftover chocolate from dipping bonbons and decided the best use for it would be right on top of it!! DELICIOUS! Feel free to add a few chopped nuts, too.

Easy Microwave Peanut Brittle
Ingredients
- 1 1/4 cups unsalted roasted peanuts
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 tsp plus a pinch of salt
- 1 Tbsp butter
- 1 tsp pure vanilla extract
- 1 tsp baking soda
Instructions
- Butter a large cookie sheet.
- In a 2-quart glass mixing bowl or casserole dish mix together granulated sugar and corn syrup.
- Microwave on high power for 4 minutes.
- Stir in the peanuts and salt.
- Microwave on high power for 4 minutes.
- Mix in butter and vanilla stirring until butter is melted.
- Microwave on high power for 2 minutes. The mixture will be a golden brown color near the end. If not, add an extra minute or two because the peanut brittle will be chewy, not brittle if undercooked. Microwaves do vary.
- Stir in baking soda. (This is the fun part; it gets all foamy)
- Quickly pour mixture on the greased cookie sheet and spread it as thin as you can.
- Cool then break into pieces. Store in an airtight container or it will become soft.
