Scrambled Eggs and Asparagus, A Tasty Mood Lifting Breakfast
Scrambled eggs and asparagus might be the perfect start to a terrific day! I am sure you have heard that foods can actually be mood-lifting.
Breakfast definitely seems like the perfect time to start with a mood-lifting food. I have heard that asparagus is one of the best for lifting moods.
I decided to give this combo a try as a breakfast experiment; scrambled eggs and asparagus with a little ham and cheese.

Cut up 1 ounce of ham (a meat substitute for vegans) and a handful of asparagus tops—sauté in a small amount of Smart Balance Light. Use olive or coconut oil for Paleo diets.

Then whisk the eggs together. Â Duck eggs were used in the photo. Â The mixture was 1 whole egg, 2 whites, and a couple of tablespoons of soy milk. Any milk or milk substitute is fine.

When the eggs are done, top them with half an ounce of Mexican-Style Blend Reduced-Fat Cheese. Â For yeast-free and Paleo diets, no cheese. For vegan diets, I suggest Follow Your Heart Cheddar, Fiesta Blend Style Shreds, or Daiya Cheddar Style Shreds.
Weight Watchers points plus ham and cheese can count this dish as 5 points. Duck eggs are an extra point due to their larger size.
This scrambled egg and asparagus combination was so amazing. The asparagus really blends nicely with the egg. I decided to try it out on my husband the next day.
