Scrambled Eggs & Asparagus…A Tasty Mood Lifting Vegetable!

I have heard that foods can actually be mood-lifting, and that asparagus of all things, is one of the best. I decided to give this a try as a breakfast experiment, scrambled eggs and asparagus with a little ham and cheese.

 

Breakfast definitely seems like the perfect time to start with mood-lifting food.

 

First I cut up 1 oz of ham (meat substitute for vegans) and a handful of asparagus tops. I sauteed them in a small amount of Smart Balance Light. Use olive or coconut oil for Paleo diets.

 

Then I whisked together the eggs.  Duck eggs were used in the photo.  The mixture was 1 whole egg, 2 whites, and a couple of Tbls soy milk. Any milk or milk substitute is fine.

When eggs are done top with 1/2 serving of Weight Watchers Mexican Style Blend Reduced Fat Cheese.   For yeast-free and Paleo diets, no cheese. For vegan diets, I suggest Follow Your Heart Cheddar Or Fiesta Blend Style Shreds or Daiya Cheddar Style Shreds.

Weight watcher points plus with ham and cheese can count this dish as 5 points. Ducks eggs are an extra point due to their larger size.

This scrambled egg and asparagus combination was so amazing. The asparagus really blends nicely with the egg. I decided to try it out on my husband the next day.

Success! He also loved it.
