Ground Turkey Taco Soup
Ground turkey taco soup is a quick and tasty dinner for any day of the week. Actually, any ground meat you have on hand is fine; I just happened to have turkey. It’s a robust, fiber-rich soup with quinoa, two different kinds of beans, and corn.

This colorful taco soup is bursting with flavor. I cut the vegetables quite small, but size is a personal preference.
Swiss chard may seem odd to add to chili, but it is a healthy vegetable and doesn’t alter the flavor of the chili, so why not? I add Swiss chard to salads, stir-fries, and many soups.
To Make This Healthy Ground Turkey Taco Soup You Will Need These Ingredients:
- 1 1/2 lbs Ground turkey
- 1 tsp Garlic powder or 1 Fresh clove minced ~ 1 1/2 tsp Garlic substitute for Low FODMAP
- 2 packets taco seasoning ~ I used 1 mild and 1 spicy of Siete Taco Seasoning
- 1 bunch of green onions chopped ~ tops only for Low FODMAP
- 1 Green pepper
- 1 cup Swiss chard chopped small ~ any color; I like the red color
- 3 ears of corn kernels cut off the cobs ~ or 2 cups of frozen corn
- 1/4 cup Tricolored quinoa or red quinoa
- 3 15-oz cans diced tomatoes ~ Puree 2 of the cans
- 1 15-oz cans black beans, drained and rinsed
- 1 15-oz can garbanzo beans, drained and rinsed
- 1 cup water
Serve taco soup with grated cheese, diced onions, chips, and cornbread.
We like to dip corn chips or Frito scoops into the soup while eating, too.

Ground Turkey Taco Soup
Ingredients
- 1 + 1/2 lbs Ground turkey
- 1 tsp Garlic powder or 1 Fresh clove minced ~ 1 1/2 tsp Garlic substitute for Low FODMAP
- 2 packs Taco seasoning ~ I used 1 mild and 1 spicy of Siete Taco Seasoning
- 1 bunch Green onions chopped ~ tops only for Low FODMAP
- 1 Lg Green pepper
- 1 cup Swiss chard chopped small ~ any color; I like the red color
- 3 cobs Fresh corn kernels cut off the cobs ~ or 2 cups of frozen corn
- 1/4 cup Tricolored quinoa or red quinoa
- 3 15-oz Cans diced tomatoes ~ Puree 2 of the cans
- 1 15-oz Cans black beans drained and rinsed
- 1 15-oz Can garbanzo beans drained and rinsed
- 1 cup Water
Instructions
- Brown ground turkey or meat of choice in a skillet. Drain excess fat.
- Add chopped green onions, pepper, swiss chard, and corn kernels to the cooked meat and cook for another 3-5 minutes.
- Add in all the rest of the ingredients and stir well to combine.
- Simmer for 30 minutes.
- Serve with grated cheese, diced onions, chips, and cornbread.
