Ground Turkey Taco Soup
This hearty ground turkey taco soup will satisfy the whole family. Perfect recipe for busy weeknights.

Ingredients

Ground turkey

Garlic powder or 1 Fresh clove minced
~ 1 1/2 tsp Garlic substitute for Low FODMAP

Taco seasoning
~ I used 1 mild and 1 spicy of Siete Taco Seasoning

Green onions chopped
~ tops only for Low FODMAP

Swiss chard chopped small ~ any color; I like the red color

Fresh corn kernels cut off the cobs
~ or 2 cups of frozen corn

Tricolored quinoa
or red quinoa

Cans diced tomatoes ~ Puree 2 of the cans

drained and rinsed

drained and rinsed

Instructions
Brown ground turkey or meat of choice in a skillet. Drain excess fat.
Add chopped green onions, pepper, swiss chard, and corn kernels to the cooked meat and cook for another 3-5 minutes.
Add in all the rest of the ingredients and stir well to combine.
Simmer for 30 minutes.
Serve with grated cheese, diced onions, chips, and cornbread.
We like to dip corn chips or Frito scoops into the soup while eating, too.
