  • 1 bunch Green onions chopped ~ tops only for Low FODMAP
  • 1 Lg Green pepper
  • 1 cup Swiss chard chopped small ~ any color; I like the red color
  • 3 cobs Fresh corn kernels cut off the cobs ~ or 2 cups of frozen corn
  • 1/4 cup Tricolored quinoa or red quinoa

  • 1 15-oz Cans black beans drained and rinsed
  • 1 15-oz Can garbanzo beans drained and rinsed
  • 1 cup Water

Instructions

  • Brown ground turkey or meat of choice in a skillet. Drain excess fat.
  • Add chopped green onions, pepper, swiss chard, and corn kernels to the cooked meat and cook for another 3-5 minutes.
  • Add in all the rest of the ingredients and stir well to combine.
  • Simmer for 30 minutes.
  • Serve with grated cheese, diced onions, chips, and cornbread.
  • We like to dip corn chips or Frito scoops into the soup while eating, too.
