Date & Honey Caramel Sticks ~ Gluten & Dairy-Free
Date & Honey Caramel Sticks are fun to make and a bit healthier than most caramel-type treats. I discovered this tasty, healthier caramel accidentally while I was making a new snack bar.

You will need just 4 ingredients and a food processor. Then your choice of chopped nuts and/or coconut (sweetened or unsweetened) will be to roll them in. Drizzle melted chocolate overall for a final touch.
These need to be kept in the refrigerator or freezer. Try this sometime…after they are frozen, dip them in peanut butter. Oh, so good!
To Make Date & Honey Caramel Sticks, You Will Need These Ingredients:
- Dates with pits removed. I used Medjool.
- Honey
- Almond butter.
- Chocolate chips are optional for drizzle. Allergy-friendly if needed, like Enjoy Life Semi-Sweet Chocolate Chips.
If you are a peanut butter lover like me…after these are frozen, dip the end in some peanut butter and take a big bite!!
** Note this ~ The oldest honey you have works best because it’s thicker. It will make a firmer caramel stick.

Date & Honey Caramel Sticks
Ingredients
- 5-8 dates with pits removed. I used Medjool.
- 1/3 cup honey
- Chocolate chips are optional for drizzle. gluten & dairy-free type
- 1/2 cup almond butter
Instructions
- Add the dates first and whip up in the food processor. Add the rest of the ingredients and mix them up well in the food processor.
- **Start with 5 or 6 dates; if you want a thinker consistency, add the rest. I found that different brands of honey and nut butter gave me a different result. You can decide at the very end.
- Lay wax paper on a cookie sheet. Make caramel sticks using about 1 1/2-2 Tbsp of the mixture—roll in chopped nuts or coconut, or both.
- Freeze for about 30 min or until firm. Melt some chocolate chips for drizzle if desired. Wrap each caramel in a small amount of wax paper and store them in the freezer.
We like to make these and freeze them! They are easy and delicious 😋
