Healthy Blueberry Oat Chocolate Chip Cookies
Healthy Blueberry Oat Chocolate Chip Cookies are a delicious way to give yourself a healthy snack. Each cookie contains 6 grams of protein and 4 grams of fiber.

I’ve been adding dried blueberries (not freeze-dried) to almost everything lately! My favorite dried blueberries are the small dried wild blueberries. The smaller sizes are perfect for these healthy oat cookies. Feel free to use sweetened coconut, but I prefer unsweetened, as shown in the recipe.
I make my cookies gluten-free but any all-purpose flour is fine, even whole wheat is an option. As always, any nut butter can be substituted for peanut butter!
We pack these healthy cookies on hikes, long bike rides, and kayaking. The oats, peanut butter, and fruit provide good energy and are fiber-rich.
To Make These Healthy Blueberry Oat Chocolate Chip Cookies, You Will Need These Ingredients:
- Medium to large spotted bananas
- Vanilla extract
- Natural peanut butter, I used creamy
- Pure maple syrup, agave syrup, or honey – or a combination of any of the three
- Old-fashioned gluten-free oats
- You can use any gluten-free flour you desire. My favorites are Pamela’s Products—Gluten-Free All-Purpose Flour—Artesian Blend, Bob’s Red Mill Gluten-Free All-Purpose Flour, King Arthur Gluten-Free One-To-One Baking Blend, and Sorghum.
- Baking powder ~ Corn-free if needed
- Ground flax seed
- Hemp seeds
- Chopped walnuts (or other nuts of your choice)
- Unsweetened coconut flakes
- Semi-sweet chocolate chips, regular or mini (I use Enjoy Life Semi-Sweet Chocolate Chips, dairy and gluten-free)
- Dried blueberries ~ or more if you like

Ingredients
- 3 medium to large spotted bananas ~ mashed
- 1 Tbs vanilla extract
- 3/4 cup natural peanut butter ~ I used creamy
- 3 Tbs pure maple syrup ~ agave syrup, or honey - or a combination of any of the three
- 2 cups old-fashioned gluten free oats
- 1/2 cup gluten free flour - any you desire. My favorites are Pamela's Products - Gluten - Free All -Purpose Flour - Artesian Blend ~ Bob's Red Mill Gluten Free All - Purpose Flour, and Sorghum.
- 1 tsp baking powder
- 1 Tbs ground flax seed
- 1 Tbs hemp seeds
- 3 Tbs chopped walnuts ~ or other nuts of your choice
- 3 Tbs unsweetened coconut flakes
- 1/2 cup semi-sweet chocolate chips ~ regular or mini (I use Enjoy Life Semi-Sweet Chocolate Chips, dairy & gluten free)
- 1/2 cup dried blueberries ~ or more if you like
Instructions
- Preheat oven to 350 and prepare baking sheets.
- In a large mixing bowl add mashed bananas, vanilla, peanut butter, and pure maple syrup. Mix well.
- Add oats, flour, flax seeds, hemp seeds, and baking powder. Stir to combine.
- Add chopped nuts, coconut, and chocolate chips, and dried blueberries. Stir to combine.
- Scoop mounds of dough onto prepared baking sheets. These cookies will not spread out so you can put them fairly close together on the baking sheet.
- Bake for about 15 minutes. Cool on a wire rack.
