Peanut Butter No-Bake Energy Bite Delights ~ Healthy Candy

My husband named these new Peanut Butter No-Bake Energy Bite Delights. I felt that since he had devoured (with a little help) 8 batches of these in less than one month he definitely should be the one who named them. I personally think these energy bites taste like candy!!

The pure maple syrup, oats, and peanut butter are a perfect combination for between-meal pick-me-ups, pre or post-workout snacks, after-school snacks, or just because they are so darn good. We decided part of the name had to include energy bite since my husband says they give him a boost while he is out working on the farm. He has his own special stash of these in the freezer.

What About Other Nut Butters?

Any nut butter or sunflower seed butter can be substituted for peanut butter. We are serious peanut butter fans so that’s what we always use when we make them, but I would love to know if anyone tries something different.

To Make Peanut Butter No-Bake Energy Bite Delights You Will Need To Grab These Items:

The chocolate drizzle is optional but super easy to do and oh so delicious. Another option is to add about 1/2 cup semi-sweet chocolate chips to the mix or top each energy bite with Reese’s Pieces. And from what I’ve read, Rees’s Pieces are okay for Low FODMAP.

Peanut Butter No-Bake Energy-Bite Delights

Melt in your mouth, slightly chewy peanut butter no-bake treats topped with drizzles of semi-sweet chocolate. Allergy-friendly, low fodmap, and gluten-free.

Ingredients

  • 3 1/3 cups old-fashioned rolled oats~ certified gluten-free if needed
  • 1/4 tsp salt
  • 1 1/4 cups peanut butter ~ I used a natural brand
  • 1 cup pure maple syrup
  • 1 tbsp coconut oil ~ room temperature or slightly melted
  • 3/4 cup semi-sweet chocolate chips ~ for optional for drizzle
  • 1/4 tsp vanilla extract ~ for optional for drizzle
  • 1 tbsp coconut oil ~ for optional drizzle

Instructions

  • In a large mixing bowl add peanut butter, coconut oil, pure maple syrup, and salt. Stir to mix well.
  • Add the oats and mix well, use your hands if needed.
  • Add the chocolate chips if you are using them as an add-in instead of drizzle.
  • Form dough into small round cookies. Place on a large cookie sheet lined with plastic food wrap or wax paper. They stick a bit on parchment paper.
  • Place in the freezer while you make the drizzle.
  • Drizzle:
    Melt chocolate chips, vanilla, and 1 tablespoon of coconut oil on low temp until melted. Stir well. I use the microwave and stir the mixture about 3 times while melting.
    Then using the end of a butter knife or fork dip into the melted chocolate and drizzle the chilled energy bites.
    Return to the freezer to firm up the chocolate. Store in the freezer in a freezer-safe container for the longest storage or in the refrigerator. We like to eat them frozen!!
    Leftover drizzle can be warmed up and reused. Try some over ice cream (or non-dairy) it is just like the store-bought magic shell.
