Ground turkey & vegetable soup is so easy and downright tasty that I am convinced you will make this recipe again and again. Plus it’s a great way to eat a wide variety of veggies in one meal. Not to mention use up those leftover vegetables in the fridge.
It’s funny how you end up with a great recipe.
How did I come up with this soup?
I needed to use up the bok choy that was in my refrigerator. I like to use bok choy chopped up in my fresh salads and stir-fries, but I still had too much and was trying not to be wasteful. So, I just started putting some things together and shazam…a soup that has become a favorite at our house.
We like our soup thick and hearty but if you prefer a thinner soup then add 2 pounds of ground turkey instead of 3 pounds. Just note the protein calculation will change if you count protein grams.
Please note: If you decide to add more liquid, then there is the possibility that the seasonings will need to be increased as well.
Weight watchers can serve up a heaping cup for 3 points.

To Make Ground Turkey & Vegetable Soup You Will Need:
- Lean ground turkey
- Minced onion
- Onion powder
- Salt
- Minced garlic
- Oregano leaves
- Celery
- Carrots
- Yellow onion
- Bok choy
- Fresh or frozen corn (omit for corn allergies)
- Canned green beans
- Canned of tomatoes
- Water
- Black pepper
- Basil leaves

Ground Turkey & Vegetable Soup
Ingredients
- 3 lbs ground lean turkey 2 lbs is optional
- 1 Tbsp. minced onion
- 1/2 tsp. onion powder
- 1 tsp. salt
- 1 Tbsp. minced garlic
- 2 tsp. oregano leaves
- 4 stalks celery chopped or sliced
- 4 large carrots sliced
- 1 yellow onion chopped
- 3 stalks bok choy chopped or sliced
- 1 cup corn fresh or frozen (omit for corn-free diets)
- 1 14.5 green beans can green beans, drained – cut in bite-size pieces
- 2 28oz cans of tomatoes pureed
- 1 28oz can of water
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 tsp. basil leaves
- 2 tsp. oregano leaves
Instructions
- Brown ground turkey in a large skillet.
- Drain meat in a strainer. Put cooked meat in a large kettle.
- Add the next 5 seasonings and cook about 2 minutes.
- Add chopped celery, sliced carrots, chopped onion, and bok choy and cook about 3minutes.
- Add all the other ingredients. Mix well.
- Bring to a boil and let soup simmer 40 minutes or until all vegetables are cooked. That’s it. Simple, healthy and delicious all in one big pot.
