Smashed Potatoes ~ Gluten-Free and Vegan

Smashed potatoes go down easy; I’m just warning you. These tasty little gems are not complicated, but they are addicting and delicious.

There is a simple two-step process to make smashed potatoes. First, the potatoes are boiled, then seasoned and flattened before being baked in a hot oven.

I like to season mine with olive oil and freshly ground salt and pepper. As long as your dietary needs are met, the options for seasoning are endless. McCormick Steak Seasoning, for example, is fantastic on smashed potatoes, but be sure to check the label.

To Make Smashed Potatoes, You Will Need These Ingredients:

  • Small round golden or red potatoes, about 15
  • Onion powder ~ Onion powder replacement for Low FODMAP, such as Foddies Onion Replacer.
  • Garlic powder ~ garlic powder replacement for Low FODMAP, such as Fodmazing Garlic Replacer.
  •   Sea Salt
  • Ground pepper ~ to taste
  • Dried rosemary, basil, thyme, or all three.
  • Olive oil
  • Sour cream, Greek yogurt, Ranch dressing, or ketchup is optional for topping or dipping potatoes.

Ingredients

  • 1.5 pounds Small round golden or red potatoes ~ about 15 small potatoes
  • 1-2 tbls Olive oil
  • 1/2 tsp Garlic powder ~ garlic powder replacement for Low FODMAP
  • 1/2 tsp Onion powder ~ Onion powder replacement for Low FODMAP
  • 1/2 tsp Sea salt
  • 1/4 tsp Ground pepper ~ to taste
  • 1/2 tsp Dried rosemary, basil, or thyme ~ any or all
  • Ranch dressing, sour cream, Greek yogurt, or ketchup ~ Optional for dipping

Instructions

  • Boil potatoes until fork tender about 15 minutes, or follow microwave instructions in notes.
  • Strain potatoes and set aside.
  • Preheat the oven to 425F.
  • Place potatoes on a parchment paper-lined sheet pan.
  • Using a potato masher, the bottom of a jar, or strong fork gently flatten the potatoes.
  • Lightly brush the potatoes with olive oil and sprinkle with any or all the seasonings.
  • Roast for 30 minutes or until crispy and golden brown.
  • Serve with Ranch dressing, sour cream, Greek yogurt, or ketchup.

Notes

Microwave Instructions:
  • Place the potatoes in a microwave-safe dish and cover them tightly with plastic wrap.
  • Microwave the potatoes for 5-10 minutes or until fork tender.
  • Keep the potatoes covered with the plastic wrap on the counter to continue steaming as they cool down.
