Smashed Potatoes ~Gluten-Free and Vegan

- 1.5 pounds Small round golden or red potatoes ~ about 15 small potatoes
- 1-2 tbls Olive oil
- 1/2 tsp Garlic powder ~ garlic powder replacement for Low FODMAP
- 1/2 tsp Onion powder ~ Onion powder replacement for Low FODMAP
- 1/2 tsp Sea salt
- 1/4 tsp Ground pepper ~ to taste
- 1/2 tsp Dried rosemary, basil, or thyme ~ any or all
- Ranch dressing, sour cream, Greek yogurt, or ketchup ~ Optional for dipping
Boil potatoes until fork tender about 15 minutes, or follow microwave instructions in notes.
Strain potatoes and set aside.
Preheat the oven to 425F.
Place potatoes on a parchment paper-lined sheet pan.
Using a potato masher, the bottom of a jar, or strong fork gently flatten the potatoes.
Lightly brush the potatoes with olive oil and sprinkle with any or all the seasonings.
Roast for 30 minutes or until crispy and golden brown.
Serve with Ranch dressing, sour cream, Greek yogurt, or ketchup.
Microwave Instructions:
- Place the potatoes in a microwave-safe dish and cover them tightly with plastic wrap.
- Microwave the potatoes for 5-10 minutes or until fork tender.
- Keep the potatoes covered with the plastic wrap on the counter to continue steaming as they cool down.
