Grandma’s Cheesy Potato Casserole
Here is another family favorite and the perfect side dish for most of our holiday gatherings: Grandma’s Cheesy Potato Casserole. My mother has also often served it at brunches with her quilting friends.

This is a dish to enjoy and savor fully; it has the perfect blend of flavors, even though you only add salt and pepper for seasonings.
How can it be okay to be gluten-free?
I have added a gluten-free cream of chicken soup recipe, but packaged gluten-free cream of chicken soups are also available now in some stores and online.
1 cup extra grated cheese for the top
Mix soup, sour cream, salt, pepper, green onions, and cheese in a large mixing bowl.
Add potatoes and stir to combine—place in a greased 13″x 9″ pan. Bake for 30 minutes at 350. Remove from oven and top with extra cheese; return to oven for 15 more minutes. The goal is for the mixture to be bubbly around the edges.
Optional topping: Melt 1/4 cup butter and mix with 2 cups crushed cornflakes. Sprinkle over the top before baking instead of extra grated cheese. Bake for 45 minutes. The mixture should be bubbly around the edges.

Ingredients
- 1 30-ounce bag Ore Ida Country Style Frozen hash browns ~ partially thawed
- 1 10 3/4-ounce Can cream of chicken soup ~ for a gluten-free cream of chicken soup recipe go to link in notes for gluten-free soup option
- 2 cups Sour cream
- 1 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/2 cup Green onions chopped
- 2 cups Grated cheddar cheese
- 1 cup Extra grated cheese for the top
Instructions
- Mix soup, sour cream, salt, pepper, green onions, and cheese in a large mixing bowl.
