Gluten Free Applesauce Muffins – No added sugar & less fat

I love these muffins so much. In fact, I think the flavor gets even better by the next day. So, if you don’t gobble them all up the first day…. you will see what I am talking about.

Gluten-Free Applesauce Muffins have no added sugars or sweeteners other than the applesauce, so if you are on the Candida Diet this is a nice muffin for a treat, but you might want to leave out the raisins as they are not recommended on that type of diet.

If you are on weight watchers point plus program these muffins have 4 points with raisins and 3 points without raisins. Delicious either way I promise.

Gluten-Free Applesauce Muffins             Makes 12

Ingredients:
1 egg or egg replacer
2 Tbl oil (I use a light olive oil)
1 1/2 cup unsweetened applesauce
1 cup brown rice flour
3/4 cup garbanzo bean flour
3/4 tsp. baking soda
2 tsp. baking powder
3/4 tsp xanthan gum
1/4 tsp. salt (I use sea salt)
1/2 cup raisins (optional)

Preheat oven to 375.
In a medium-size bowl add the egg, oil and apple sauce.
Mix well using a wire whisk.
Measure flours.
Add to applesauce mixture, along with baking soda, baking powder, xanthan gum, and salt.
Mix with a spoon. The mixture will probably seem thick.
If adding raisins stir them in at this time.
Spray muffin tin with a non-stick spray or use silicone liners, and fill about 3/4 full. This recipe will make 11-12 muffins depending on the size of the pan. Mine makes 11 exactly. The batter will get kind of airy before you finish, but don’t worry it is fine.

Bake for 20-25 min. They will be a nice golden brown and spring back when lightly touched. Mine cook exactly 20 min. Remove from oven and let sit for 5 min. Gently go around the edges with a knife to loosen, and cool on a wire rack. Eat one right away! They are so yummy and satisfying. Then save one (or two) for the next day and freeze the rest for a quick snack sometime. Defrost for 1 min in the microwave and it’s just like a freshly baked muffin.

They are as moist and tender as they look. I hope you enjoy this recipe, it is pretty amazing for a sugar-free and gluten-free muffin!!

* Note – for me I make these completely fat free. I leave out the oil and add 2 cups of applesauce instead of 1 1/2 cups.
