GF Date ‘N’ Honey Pecan Muffins

Inside these GF Date ‘N’ Honey Pecan golden muffins are dates, carrots, pecans, and the superfood…chia seeds.

Chia seeds can be eaten raw or cooked. Add chia seeds to hot or cold cereal, sprinkle them over yogurt, or even add some to your favorite granola and cookie recipes.

Chia seeds are an excellent “add-in” to muffin recipes. They are a good source of omega-3 fatty acids, fiber, iron, and calcium. Chia seeds are also rich in antioxidants, which help protect our bodies from free radicals.

 

 

GF Date N’ Honey Pecan Muffins                  Makes 24 muffins

2 3/4 cups – purchased gluten-free flour baking blend or try my GF Self Rising Flour Blend 
2 Tbsp Chia seeds
1/2 cup milk, or non-dairy milk substitute
2/3 cup honey or agave
2 tsp vanilla
1 cup grated carrots
2/3 cup chopped dates

1/2 cup chopped pecans

Preheat oven to 350. Spray muffin tin with a non-stick cooking spray.

Mix eggs or replacer, milk or substitute, honey or agave, and vanilla together.
Stir in carrots. Add flour and chia seeds, mix with a spoon.
Fold in Pecans and dates.

Spoon into muffin tin. Bake for  20-22 minutes.
Cool on wire rack.

These muffins will keep a few days in an airtight container or you can freeze them for longer storage.

These are sweet & delicious.
