GF date & Muesli breakfast cookies mean no more excuses for skipping breakfast!!  I’m a huge fan of oatmeal and muesli because there’s lots of good fiber and “stick to your ribs” qualities.

I had this huge bag of dates that I needed to get busy and use up, so I decided to add some to my breakfast cookie recipe instead of my usual…raisins.

These sweet and chewy Muesli breakfast cookies are sure to be a hit with the whole family. For a really sweet treat try them frozen, that’s my favorite way!

These cookies have other nutritious ingredients to keep your energy up too:

  • Bananas
  • Hemp seeds
  • Nuts
  • Honey or Agave syrup

To Make GF Date & Muesli Breakfast Cookies You Will Need These Ingredients:

  • Large spotted bananas
  • Honey or agave syrup
  • Coconut oil
  • Vanilla extract
  • Gluten-Free old fashioned oats
  • Gluten-Free Muesli
  • Cinnamon
  • Unsweetened coconut
  • Chopped walnuts ~ or any preferred nut
  • Hemp hearts
  • Dried dates without pits, chopped

Start your day with a couple of healthy breakfast cookies. Easy "grab and go" when you are in a hurry or feel like something sweet but still healthy too. Gluten-free, vegan, and allergy-friendly.

Ingredients

  • 2 large spotted bananas mashed
  • 1/3 cup honey ~ or agave syrup
  • 1/4 cup coconut oil – heat to soften if needed ~ melted is fine too
  • 1 tsp vanilla extract
  • 2 cups gluten-free old fashioned oats
  • 1 cup gluten-free muesli
  • 1 tsp cinnamon
  • 1/4 cup unsweetened coconut
  • 1/4 cup finely chopped walnuts ~ or any preferred nut
  • 1/2 cup hemp hearts
  • 1/2 dates without pits chopped ~ measure before chopping

Instructions

  • Preheat oven to 325. Prepare cookie sheets with parchment paper or silicone liners.
  • In a large mixing bowl add all ingredients in the order given. Stir as you add the ingredients to combine well.
  • I used a large cookie scoop for these breakfast cookies; you could always use a smaller one and make twice as many cookies. Just remember to shorten the baking time if you decide to make smaller cookies.
  • Bake for 20 minutes.
  • Let cookies rest on the baking sheet before transferring to a cooling rack. They will be fragile until they reach room temperature. Don’t worry though; they will firm up nicely,
