For this quick and easy “no-cooking” method of freezer jam, you will need to use Ball Instant Fruit Pectin.
The hardest part of this freezer jam might be deciding what flavor to make. Strawberry, raspberry, Marionberry, and blueberry; I love them all. But my absolute favorite is a mixture of raspberry and Marionberry. The slight tartness is nothing less than perfect with peanut butter toast, fresh biscuits, and even as a sundae topping over vanilla ice cream.
To make low sugar freezer jam you will need 6-8 clean small jars or freezer-safe containers. Grab these ahead of time and make sure they are clean and dry before you begin making the jam. Otherwise, you might be scrambling to find containers at the last minute. Yup, I’ve done that, that’s how I know.
Easy prep, easy cleanup, delicious jam any time of the year. When I have used frozen berries I let them defrost in a bowl and pour out about 1/4 of the liquid before crushing the berries. Now with that said if there doesn’t seem to be a lot of excess liquid, there is no need to pour any out. There is probably no perfect answer, just don’t drain all the juice.
You’ve seen it before and you will no doubt see it again…I can’t live without it, my favorite mashing tool. I use it for everything imaginable. This tool works especially great for mashing berries for jam.
It is a personal preference, but I suggest not over-mashing the fruit because it will be broken down further when it is combined with sugar and pectin. Also, I like to find little clumps of berries in my jam; it’s like a tasty surprise.
All mashed with still some substance to the berries. Again this is a personal preference.
Combine the sugar and pectin with the crushed berries and stir for just three minutes. Now you have fresh freezer jam!
The last step is to fill up your jars or containers. The jam will keep in the refrigerator for 3 weeks or can be frozen for up to a year.
You can make delicious low-sugar freezer jam any time of the year with fresh or frozen (defrosted) berries. I freeze extra berries, knowing I will make jam throughout the year.
