Farmer’s Market Black Bean Chili ~ Meatless
Farmer’s Market black bean meatless chili is a thick, hearty, scoopable chili. When I say scoopable, I mean you can scoop up this delicious chili in a dippable or scoopable chip, which is exactly what I love to do. My favorite scoopable chips are Late July Sea Salt Dippers, Fritos Scoops, and Tostitos Baked Scoops.

Did I mention how healthy this Farmer’s Market chili is? This hearty two-bean chili is chock-full of peppers, carrots, celery, corn, onions, and tomatoes. The slightly smoky aroma will have you pacing in the kitchen, just waiting to dig in.
Since you are using canned beans, the chili only has to simmer for 45 minutes before it can be served.
Chili can be served in many different ways:
- Ladled over a baked potato
- Topped with chopped onions, cubed or sliced avocado, shredded cheese (or dairy-free)
- In a crunchy tortilla bowl, I even like to add some shredded lettuce at the bottom of the bowl
- Over a (regular or meatless) hot dog or burger in an opened-toasted bun, also known as a chili dog or chili burger
- Rolled up in a flour or corn tortilla
- On top of cooked rice or pasta
To Make Farmer’s Market Black Bean Chili, You Will Need These Ingredients:
- Canned black beans
- Canned red kidney beans, I like the dark red best
- Canned or frozen corn
- Red pepper
- Green pepper
- Red onion
- Celery
- Carrots
- Tomato sauce
- Crushed tomatoes
- Garlic cloves
- Nutritional yeast
- Chili powder
- Paprika
- Bay leaves
- Salt and pepper
- Optional toppings: Avocados, green onions, cheese or dairy-free
Delicious served with freshly baked homemade cornbread.

Farmer's Market Black Bean Chili
Ingredients
- 2 15-ounce Canned black beans ~ drained and rinsed
- 2 15-ounce Canned red kidney beans I like the dark red best ~ drained and rinsed
- 2 cups Canned drained or frozen corn
- 1 Red pepper ~ diced
- 1 Green pepper ~ diced
- 2 Small red onions ~ chopped fine
- 2 Sticks Celery ~ chopped fine
- 3 Carrots ~ sliced or chopped
- 1 15-ounce Tomato sauce
- 2 15-ounce Crushed tomatoes
- 8 Garlic cloves ~ minced
- 4 Tbsp Nutritional yeast
- 2 Tbsp Chili powder
- 1 Tbsp Paprika
- 8 Bay leaves
- 1 tsp Salt
- 1/4 tsp Pepper
Instructions
- Saute the vegetables for about 3-5 minutes in a large pot in a small amount of water or juice from crushed tomatoes.
- Add all other ingredients except toppings. Stir well and simmer 45 -60 minutes.
