Ingredients

  • 2 15-ounce Canned black beans ~ drained and rinsed
  • 2 15-ounce Canned red kidney beans I like the dark red best ~ drained and rinsed
  • 2 cups Canned drained or frozen corn
  • 1 Red pepper ~ diced
  • 1 Green pepper ~ diced
  • 2 Small red onions ~ chopped fine
  • 2 Sticks Celery ~ chopped fine
  • 3 Carrots ~ sliced or chopped
  • 1 15-ounce Tomato sauce
  • 2 15-ounce Crushed tomatoes
  • 8 Garlic cloves ~ minced
  • 4 Tbsp Nutritional yeast
  • 2 Tbsp Chili powder
  • 1 Tbsp Paprika
  • 8 Bay leaves
  • 1 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Saute the vegetables for about 3-5 minutes in a large pot in a small amount of water or juice from crushed tomatoes.
  • Add all other ingredients except toppings. Stir well and simmer 45 -60 minutes.

Optional toppings:
Avocados, green onions, cheese or dairy-free
