Disappearing S’mores Energy Balls

Disappearing S’mores Energy Balls are doing just that, disappearing from my freezer so quickly I can hardly make them fast enough! They are a deliciously soft energy ball that is gluten, soy, and egg-free with a dairy-free option.

S'mores Energy Balls Gluten-free

Adding just one or two mini marshmallows makes the energy balls extra chewy and so irresistible. I personally add just one in the middle of each ball. It’s like getting a special surprise when you bite into the marshmallow.

If you can have dairy and soy, mini peanut butter M&Ms are a fun addition to these energy balls. I usually add about 4 mini M&Ms to each ball before freezing, mostly because my grandson loves them and they add color. Mini peanut butter M&Ms don’t contain gluten ingredients but aren’t certified gluten-free, and as mentioned, they do contain dairy and soy.

These are perfect party treats; folks of all ages love them.

To make disappearing S’mores energy balls, you will need these ingredients:

  • Peanut Butter ~ Regular (like Jiff) and natural peanut butter (like Adams that requires stirring). I use both types in this recipe. I feel this gives the energy balls the best texture.
  • Honey
  • Pure maple syrup
  • Vanilla
  • Unsweetened or sweetened coconut
  • Old-fashioned oats ~ gluten-free oats if needed
  • Quick cooking oats ~ gluten-free if needed
  • Corn flakes ~ I used a gluten-free, low/no sugar cereal.
  • Corn Chex cereal
  • Mini semi-sweet chocolate chips ~ I used Enjoy Life Allergy-Friendly
  • Mini marshmallows – Kraft Jet-Puffed Marshmallows are free from milk, egg, peanut, wheat, fish, and soy.
  • Optional Allergy-friendly candy-coated chocolate candies or Mini peanut butter M&M’s – omit for dairy and soy-free diets.

This recipe makes a large batch of energy balls, about 42-45. I prefer bigger batches because we eat so many and like to keep them on hand for lunches and snacks. These should be stored in the refrigerator or freezer.

Enjoy!
