Peanut Butter and Jam Swirl Bars
A soft peanut butter bar with swirls of jam giving you both flavors in every bite. A whole new way to enjoy P & J's.

- 1 large Ripe banana ~ just barely ripe for Low FODMAP diets
- 1/4 cup Natural peanut butter ~ or any other nut butter or use a sunflower seed butter for nut-free diets.
- 1 Large Egg or flax egg Flax Egg- 1 Tbsp ground flax seed mixed with 3 Tbsp warm water, stir and let sit 3-5 minutes
- 1/4 cup Pure maple syrup or honey ~ pure maple syrup for vegan
- 1/2 tsp Vanilla extract
- 1 cup Oat flour~ gluten-free if needed
- 1/2 tsp Baking powder ~ corn-free if needed
- 1 tbsp Hemp seeds
- 2-3 Tbsp Jam or your choice ~ check for allergens such as hidden corn
Preheat oven to 350 F
Line a 8-inch square pan with parchment paper.
In a medium bowl, mash the banana.
Add peanut butter or sunflower seed butter and mix well.
Add egg or flax egg, pure maple syrup or honey, and vanilla extract. Mix well.
Stir in flour, baking powder, and hemp seeds. Stir to combine all ingredients.
Pour into the prepared pan. Drop 2-3 Tbsp of jam on top, and with a dull knife, swirl the jam throughout the batter but don’t stir it in.
Bake the bars for 18-20 minutes.
Check doneness with a toothpick. When the toothpick is placed in the center of the bars, the toothpick should come out clean of dough.
Enjoy warm or at room temperature.
These bars are freezer-friendly.
