Healthy Coconut Monster Blondies

can garbanzo beans
chickpeas, drained and rinsed (save the liquid if you do egg-free baking with aquafaba)

cup
plus 1 Tbsp honey
agave, or pure maple syrup.

peanut butter
almond butter, or SunButter.

vanilla

baking soda

baking powder ~ corn-free if needed

unsweetened coconut

semi-sweet mini or regular chocolate chips ~allergy-friendly if needed

Instructions
Preheat oven to 350. Line an 8x8-inch baking pan with parchment paper.
Add rinsed and drained garbanzo beans, honey, peanut butter, and vanilla to a food processor. Blend until smooth.
Add salt, baking soda, baking powder, and oat flour, and blend to mix well.
Stir in the coconut and 1/3 cup of the chocolate chips.
Spread dough into the pan and top with remaining chocolate chips and M&Ms.
Bake for 25-28 minutes. Cool 20 minutes on a wire rack.
Cut into squares. Store in the refrigerator or freezer.
