Ingredients

  • 15 oz can garbanzo beans chickpeas, drained and rinsed (save the liquid if you do egg-free baking with aquafaba)
  • 1/4 cup plus 1 Tbsp honey agave, or pure maple syrup.
  • 1/2 cup peanut butter almond butter, or SunButter.
  • 1 1/2 tsp vanilla
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder ~ corn-free if needed
  • 1 Tbsp oat flour
  • 1 1/2 Tbsp unsweetened coconut
  • 1/4 tsp salt
  • 1/2 cup semi-sweet mini or regular chocolate chips ~allergy-friendly if needed
  • 30 M&Ms or Choco No Nos

Instructions

  • Preheat oven to 350. Line an 8x8-inch baking pan with parchment paper.
  • Add rinsed and drained garbanzo beans, honey, peanut butter, and vanilla to a food processor. Blend until smooth.
  • Add salt, baking soda, baking powder, and oat flour, and blend to mix well.
  • Stir in the coconut and 1/3 cup of the chocolate chips.
  • Spread dough into the pan and top with remaining chocolate chips and M&Ms.
  • Bake for 25-28 minutes. Cool 20 minutes on a wire rack.
  • Cut into squares. Store in the refrigerator or freezer.

Notes

** 3 Tbsp of aquafaba equals one large egg as a substitute in egg-free baking.
