Ingredients

  • 2 cups Old Fashioned Oats ~ certified gluten-free if needed
  • 1/4 cup Oat Bran ~ certified gluten-free if needed
  • 2 1/4 cups Water
  • 1/2 tsp Salt
  • 1/2 tbsp Oil I don't use any oil
  • 1/4 cup Walnuts or pecans chopped, optional. I don't add nuts.

Instructions

  • Mix all ingredients in a blender.
  • Scrape the sides of the blender a couple times with a spatula if necessary. (please turn off first)
  •  Let sit batter for about 5 minutes.
  • Lightly oil or use a non-stick spray on the waffle iron before heating.
  • Pour 1 cup of batter at a time in the waffle iron and cook 11 to 12 minutes. Times may vary. Waffle will be firm to the touch when done, but will remain a pale color.
  • Remove with a fork and serve with some Pure Maple Syrup, fruit or nut butter and enjoy.
  • Note: Batter will thicken as it sits. Add small amounts of water as necessary for easy pouring, this will not effect the outcome of the waffles.

Notes

I freeze extra waffles in freezer bags with wax paper or parchment paper in between each waffle—about three whole waffles per freezer bag. Then pop it in the toaster in the morning or when a snack craving hits.
