- 1/4 cup Unsweetened applesauce ~ regular or cinnamon
- 1 cup Peanut Butter ~ sunflower seed butter for nut-free
- 1 tsp Pure vanilla extract
- 2/3 cup Sugar
- 1/4 cup 2 tbsp Tiger nut flour
- 1/4 tsp Salt
- 1 1/2 tsp Baking soda
Preheat oven to 350.
Line a baking sheet with parchment paper or a silicone liner.
Combine the first 4 ingredients in a medium mixing bowl.
Mix well.
Make a well in the middle and add the rest of the ingredients.
Mix all together well.
Scoop about 2 tbsp of dough and place on a lined baking sheet. Push down slightly.
Bake for 10-12 minutes. Let cookies rest about 7 minutes before transferring to a wire rack.
