- Unsweetened applesauce ~ regular or with cinnamon
- Peanut butter ~ sunflower seed butter for nut-free
- Pure vanilla extract
- Sugar
- Tiger nut flour
- Salt
- Baking soda

Unlike many gluten-free flours, cassava flour can be used to replace all-purpose flour in baking cakes, cookies, crackers, and bread.
As you may know, I love cookies, and for best results, I prefer to use a stainless steel, non-stick surface baking sheet/pan like these. I line my baking sheets with parchment paper instead of using cooking spray, so it doesn’t alter the taste of the cookies.

Tiger Nut Peanut Butter Cookies
Ingredients
- 1/4 cup Unsweetened applesauce ~ regular or cinnamon
- 1 cup Peanut Butter ~ sunflower seed butter for nut-free
- 1 tsp Pure vanilla extract
- 2/3 cup Sugar
- 1/4 cup 2 tbsp Tiger nut flour
- 1/4 tsp Salt
- 1 1/2 tsp Baking soda
Instructions
- Preheat oven to 350.
- Line a baking sheet with parchment paper or a silicone liner.
- Combine the first 4 ingredients in a medium mixing bowl.
- Mix well.
- Make a well in the middle and add the rest of the ingredients.
- Mix all together well.
- Scoop about 2 tbsp of dough and place on a lined baking sheet. Push down slightly.
- Bake for 10-12 minutes. Let cookies rest about 7 minutes before transferring to a wire rack.
