As you may know, I love cookies, and for best results, I prefer to use a stainless steel, non-stick surface baking sheet/pan like these. I line my baking sheets with parchment paper instead of using cooking spray, so it doesn’t alter the taste of the cookies.

Ingredients

  • 1/4 cup Unsweetened applesauce ~ regular or cinnamon
  • 1 cup Peanut Butter ~ sunflower seed butter for nut-free
  • 1 tsp Pure vanilla extract
  • 2/3 cup Sugar
  • 1/4 cup 2 tbsp Tiger nut flour
  • 1/4 tsp Salt
  • 1 1/2 tsp Baking soda

Instructions

  • Preheat oven to 350.
  • Line a baking sheet with parchment paper or a silicone liner.
  • Combine the first 4 ingredients in a medium mixing bowl.
  • Mix well.
  • Make a well in the middle and add the rest of the ingredients.
  • Mix all together well.
  • Scoop about 2 tbsp of dough and place on a lined baking sheet. Push down slightly.
  • Bake for 10-12 minutes. Let cookies rest about 7 minutes before transferring to a wire rack.
