Ingredients

  • 1 30-ounce bag Ore Ida Country Style Frozen hash browns ~ partially thawed
  • 1 10 3/4-ounce Can cream of chicken soup ~ for a gluten-free cream of chicken soup recipe go to link in notes for gluten-free soup option
  • 2 cups Sour cream
  • 1 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 cup Green onions chopped
  • 2 cups Grated cheddar cheese
  • 1 cup Extra grated cheese for the top

Instructions

  • Mix soup, sour cream, salt, pepper, green onions, and cheese in a large mixing bowl.
  • Add partially thawed potatoes and stir to combine—place in a greased 13"x 9" pan.
  • Bake for 30 minutes at 350. Remove from oven and top with extra cheese; return to oven for 15 more minutes. The goal is for the mixture to be bubbly around the edges.
  • Optional topping: Melt 1/4 cup butter and mix with 2 cups crushed cornflakes. Sprinkle over the top before baking instead of extra grated cheese. Bake for 45 minutes. The mixture should be bubbly around the edges.
