GF Trail Mix Krispie Treats
Gluten-free krispie treats with pumpkin seeds, dried cranberries, and chocolate chips

- 1/4 cup Butter ~ or butter substitute like Plant Based Country Crock
- 40 LG ~ or 5 cups of miniature marshmallows. I used Dandies which are also vegan
- 5 cups Gluten-free crispy rice cereal ~ regular if GF isn't necessary
- 3/4 cup Dried cranberries ~ I use unsweetened dried cranberries
- 1/2 cup Roasted pumpkin seeds ~ salted or plain
- 3/4 cup Semi-sweet mini chocolate chips ~ I used allergy-friendly like Enjoy Life Semi-Sweet Mini
- 1/3 cup Semi-sweet regular size chocolate chips
Prepare a 9" X 13" pan with non-stick cooking spray, butter, coconut oil, or line with parchment paper.
In a large saucepan, melt butter or butter substitute. Add marshmallows and stir until melted.
Remove from heat and stir in krispie rice cereal, cranberries, and pumpkin seeds. Add the mini chocolate chips and gently stir to mix in.
Press into the prepared 9"x13" baking dish.
Sprinkle the remaining chocolate chips over the top and press them in slightly.
Let cool. Cut into whatever size treats you like!
Store in an airtight container for several days.
