Power House Energy Cookies

A tasty healthy oatmeal cookie rich with nutrients and an energy booster. Great for lactating moms too.

Ingredients

  • 2 1/4 cup Old fashioned oats ~ gluten-free if needed
  • 3/4 cup plus 1 tbsp oat flour ~ gluten-free if needed ~ you can also substitute 1 scoop of Vital Proteins Collagen Peptides fir the tablespoon of oat flour
  • 3 tbsp Nutritional yeast or Brewer’s yeast
  • 1/2 tsp Pumpkin pie spice
  • 1/4 tsp Salt
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder ~ corn-free if needed
  • 1 cup Brown sugar
  • 1 /2 cup Coconut oil or olive oil ~ I prefer the flavor of the coconut oil
  • 1 Lg Egg or a flax egg ~ see notes to make a flax egg
  • 1 tsp Vanilla extract
  • 1/2 cups Dried wild blueberries, mini semi-sweet chocolate chips, or some of each

Instructions

  • Preheat oven to 350-degrees F
  • Line cookie sheets with parchment paper or silicone liners
  • In a blender, give the oats a few spins but don’t create oat flour.
  • Combine the lightly ground oats and the next 6 ingredients in a large mixing bowl.
  • In a small bowl combine softened coconut oil and brown sugar. Add egg and vanilla and mix well.
  • Add coconut oil mixture with the oat mixture and stir well.
  • Fold in dried blueberries, chocolate chips or some of each.
  • Place scoops of dough, about 2 Tbsp onto prepared cookie sheets and bake for 10-12 minutes.
  • Let cool sit about 5 minutes before transferring to a cooling rack.
  • These are fantastic frozen too.

Notes

How To Make a Flax Egg:
2 Tablespoons of ground flax seeds mixed with 1/3 cup water. Set aside while it thickens.
For more protein ~ you can substitute 1 scoop of Vital Proteins Collagen Peptides for the one tablespoon of oat flour.
