Light Hearted Apple Crisp

Ingredients

  • 8 cups Peeled and sliced apples; tart cooking type like Granny Smith or combine tart and sweet varieties
  • 1/2 cup Water
  • 3 tbsp Brown sugar
  • 1 tbsp and 1 tsp Lemon juice
  • 2 tsp Cinnamon
  • 1 cup Gluten-free old-fashioned oats (regular if not gluten-free)
  • 2 tbsp Brown sugar
  • 2 tbsp Light buttery spread such as, Smart Balance Earth Balance, and Country Crock Plant-Based Sticks are excellent choices for a Vegan or dairy-free crisp.

Instructions

  • Preheat oven to 375.
  • Combine the first 5 ingredients in a glass or Pyrex bowl, mix well. Precook in the microwave for about 8 minutes to soften apples.  Arrange the apple mixture in a 9-inch by 9-inch baking dish sprayed with Pam.
  • Combine remaining ingredients and sprinkle over apples.
  • Bake for 45-55 minutes. Checking after 45 minutes to see if the apples are tender.

Notes

Here is a tip: If you are like me and like very tender apples in your dessert. Turn off the oven and cover the apple crisp with foil; let it sit another 45 minutes in the turned-off oven. This will result in a softer crisp that is incredibly flavorful. Every apple is guaranteed to be tender, and it keeps the dessert nice and warm for serving.
