1/2cupHoney or agave syrup ~ agave for vegan, I used 1/4 cup of each
3/4cupUnsweetened natural peanut butter ~ I used a natural Valencia peanut butter. SunButter is a favorite too as well as an option for nut-free diets.
1/4cupCoconut oil
1tspVanilla extract
3cupsGluten-free brown rice cereal ~ Regular crispy rice cereal is fine if gluten-free is not needed.
Instructions
Line an 8"x 8" square pan with wax paper or spray with a non-stick cooking spray.
In a large saucepan on medium heat, warm the honey or agave syrup, peanut butter, and coconut oil stirring until creamy and smooth.
Remove from heat and add vanilla. Mix well.
Stir in crispy rice cereal mixing to coat all pieces.
Pour into prepared pan and press down gently. Let sit until firm or refrigerate for faster results.
