Add 1 tablespoon sugar and dry yeast to a small bowl.
Heat water to 100-110 degrees F. and pour into the bowl with yeast stirring just to mix. Let sit 5 minutes.
In a large bowl add the flour, salt, and remaining 1 tablespoon of sugar. Stir to combine.
Add yeast mixture, warm milk, melted butter, eggs into the flour mixture.
Mix well until completely combined using a fork or dough whisk. I used my favorite tool…Mix ‘N Masher.
Cover bowl with a clean dry kitchen towel and let rise in a warm place for 1 1/2 hours. If needed rise for 2 hours, but I've never needed to. Sometimes 1 hour is enough.
Remove the towel and punch the dough down.
Dust your work area with flour and dump the dough right on top. I use a scraper to help remove the dough, as it tends to stick to the bowl.
Divide dough into 12 equal pieces. Dough will be very soft and somewhat sticky so lightly flour your hands as needed to shape dough into balls.
Place dough balls into a 9 X 13 inch baking pan lined with parchment paper.
The dough balls will be touching.
Very very lightly brush a small amount melted butter (1/2 tbsp)over the rolls to prevent plastic wrap from sticking.
Cover rolls with plastic wrap leaving room for the rolls to rise. Then cover with a kitchen towel and let rolls rise in a warm place for 45 minutes.
Preheat oven to 390 degrees F.
Remove towel and plastic wrap and bake rolls for 15 minutes.
Brush the tops with melted butter. Let rolls sit about 5-10 minutes then remove rolls from the pan by lifting with the parchment paper.
