- 1 12 oz box of rice or corn Chex ~ or some of each
- 3/4 cup creamy peanut butter ~ substitute with sunflower seed butter if nut-free
- 1/4 cup butter or a dairy-free substitute like Plant Based Country Crock
- 1 + 1/4 cups semi-sweet chocolate chips
- 1 tsp vanilla
- 1 + 1/2 cups powdered sugar
- 1-2 cups Plain or Peanut M&Ms ~ or dairy and nut-free substitutes
Pour cereal into a large bowl that allows room for stirring.
Add peanut butter, butter or dairy-free substitute, and chocolate chips in a glass bowl or large glass measuring cup.
Microwave for 30 seconds, stir the mixture and repeat until everything is melted and smooth.
Stir in vanilla.
Pour the chocolate mixture over the cereal, gently stirring and tossing with a spatula to coat each cereal piece.
Add the powdered sugar and gently stir to coat the pieces evenly.
Another option is to dump the chocolate-covered cereal into a 2-gallon ziploc bag. Add the powdered sugar and seal the bag. Gently shake the bag to coat the cereal with powdered sugar.
Pour the coated cereal into a large bowl, along with one cup each of plain and/or peanut M&Ms in the celebration colors.
Store in an airtight container at room temperature or refrigerate.
