Cassava Flour Nut Butter Cookies ~ Gluten-Free & Vegan
Super easy one bowl allergy-friendly nut butter cookies that have lots of options for add-in ingredients. These cookies are freezer-friendly and a crowd favorite.
1cupnut butter at room temperature~ Substitute SunButter for nut-free
1/4cupunsweetened applesauce regular or cinnamon
1tspvanilla extract
2/3cupsugar ~ do not sub with liquid sweetener
1/4cupplus 2 Tbsp Cassava flour ~ or other gluten-free blends
1/4tspsalt
1 1/2tspbaking soda
optional add-ins ~ see in notes
Instructions
Line a baking sheet with parchment paper or a silicone liner.
Add all ingredients except add-ins in a medium bowl. Mix well.
Stir in add-ins at this time.
Form balls using 2 tbsp of dough and place them on a lined baking sheet. Push down the balls to about half the size.
Bake for 10 minutes at 350. Let cookies rest for about 10 minutes before transferring them to a wire rack.

Dandies Vegan Mini Marshmallows ~ gluten, corn, and nut-free and vegan, not soy-free. For soy-free marshmallows use Campfire Brand or Jett Puffed marshmallows but they do have gelatin and are not vegan.
