Magic Peanut Butter Energy Balls
Tasty protein and fiber-rich energy balls that you can bite into even when they are frozen. Crunchy and creamy at the same time.

- 1 cup Peanut Butter ~ Regular
- 1 1/2 cups Natural peanut butter that requires stirring I use both types in this recipe
- 1/2 cup Honey
- 1/2 cup Pure maple syrup
- 2 tsp Vanilla
- 3/4 cup Unsweetened coconut
- 1 cup Old-fashioned oats ~ gluten-free oats if needed
- 1 cup Quick cooking oats ~ gluten-free if needed
- 3 cups Corn flakes ~ I used a gluten-free low/no sugar cereal.
- 1 1/2 cups Corn Chex cereal
- 3/4-1 cup Mini semi-sweet chocolate chips ~ I used Enjoy Life Allergy-Friendly
- 1/3-1/2 cup Optional Allergy-friendly candy-coated chocolate candies or M&M's. I just stick a couple of candies in each ball.
In a very large bowl add peanut butter, honey, and pure maple syrup. Mix thoroughly. Add vanilla and coconut and mix thoroughly.
Stir in all oats, corn flakes, Chex cereal, and chocolate chips. Mix well. I put on gloves and use my hands.
Form balls with about 2 tablespoons of mixture. Store in the refrigerator or freezer.
