Magic Peanut Butter Energy Balls

Tasty protein and fiber-rich energy balls that you can bite into even when they are frozen. Crunchy and creamy at the same time.

Ingredients

  • 1 cup Peanut Butter ~ Regular
  • 1 1/2 cups Natural peanut butter that requires stirring I use both types in this recipe
  • 1/2 cup Honey
  • 1/2 cup Pure maple syrup
  • 2 tsp Vanilla
  • 3/4 cup Unsweetened coconut
  • 1 cup Old-fashioned oats ~ gluten-free oats if needed
  • 1 cup Quick cooking oats ~ gluten-free if needed
  • 3 cups Corn flakes ~ I used a gluten-free low/no sugar cereal.
  • 1 1/2 cups Corn Chex cereal
  • 3/4-1 cup Mini semi-sweet chocolate chips ~ I used Enjoy Life Allergy-Friendly
  • 1/3-1/2 cup Optional Allergy-friendly candy-coated chocolate candies or M&M's. I just stick a couple of candies in each ball.

Instructions

  • In a very large bowl add peanut butter, honey, and pure maple syrup. Mix thoroughly. Add vanilla and coconut and mix thoroughly.
  • Stir in all oats, corn flakes, Chex cereal, and chocolate chips. Mix well. I put on gloves and use my hands.
  • Form balls with about 2 tablespoons of mixture. Store in the refrigerator or freezer.
