A Date With A Fig Energy Bites

Healthy little energy balls made with dried dates and figs.

Ingredients

  • 1 cup old fashioned oats gluten-free if needed.
  • 2/3 cup unsweetened coconut
  • 1/2 cup peanut butter I used creamy natural. Substitute with any nut butter, almond or sunflower seed butter for Paleo.
  • 1/2 cup ground flaxseed
  • 1/4 cup dried figs cut in small pieces. ~ It’s a little sticky but hang in there…
  • 1/3 cup pureed dates Apricots or figs can be substituted, or try half of each fruit.
  • 1 Tbsp chia seeds
  • 1 tsp vanilla protein powder ~ I used Orgain Organic Protein
  • 1/8 cup water
  • 1 pinch of salt

Instructions

  • In a medium mixing bowl add all ingredients. A stand mixer or if you prefer stir manually. Hand mixers are not recommended.
  • Chill in the refrigerator for about 30 minutes.
  • Make into 1inch size balls. Store in an airtight container in the refrigerator for up to one week. Freeze for longer storage.
  • These are great served at parties in paper candy holders…makes them fancy I think. Melted chocolate could be drizzled over the tops too.
