- 1 cup old fashioned oats gluten-free if needed.
- 2/3 cup unsweetened coconut
- 1/2 cup peanut butter I used creamy natural. Substitute with any nut butter, almond or sunflower seed butter for Paleo.
- 1/2 cup ground flaxseed
- 1/4 cup dried figs cut in small pieces. ~ It’s a little sticky but hang in there…
- 1/3 cup pureed dates Apricots or figs can be substituted, or try half of each fruit.
- 1 Tbsp chia seeds
- 1 tsp vanilla protein powder ~ I used Orgain Organic Protein
- 1/8 cup water
- 1 pinch of salt
In a medium mixing bowl add all ingredients. A stand mixer or if you prefer stir manually. Hand mixers are not recommended.
Chill in the refrigerator for about 30 minutes.
Make into 1inch size balls. Store in an airtight container in the refrigerator for up to one week. Freeze for longer storage.
These are great served at parties in paper candy holders…makes them fancy I think. Melted chocolate could be drizzled over the tops too.
