Grain-Free Ground Turkey Vegetable Soup
A hearty protein-rich grain-free soup with loads of Low FODMAP vegetables. No onions and garlic and gluten-free.

- 1 1/2 lbs Ground turkey ~ or ground chicken
- 1 Large Green pepper ~ chopped
- 2 Stalks Celery ~ chopped
- 5 Medium Carrots ~ sliced
- 2-3 Stalks Bok Choy ~ chopped
- 4-5 Stalks Swiss Chard plus half of the leaves ~ chopped
- 2-3 Leaves from Kale Stalks ~ chopped
- 1/4 Cup Fresh Parsley ~ chopped and measured after chopping
- 1 Bunch Green onion tops ~ chopped
- 2 15 ounce Tomatoes ~ pureed
- 3/4 cup Water
- 2 1/2 teaspoons Fodmap Paleo Powder
- 2 teaspoons Fody Steak Seasoning
- Ground salt and pepper to taste
Brown ground turkey in a large kettle.
Add all chopped vegetables and saute for about 5 minutes.
Puree canned tomatoes and add to the kettle. Add water and seasonings. Stir well and simmer for 30-40 minutes or until vegetables are tender to taste. I prefer mine just slightly firm.
