Easy Microwave Peanut Brittle
Sweet, crunchy, and irresistible homemade peanut brittle is easier than you might think to make. Gluten, egg, and soy-free with optional chocolate drizzle.

- 1 1/4 cups unsalted roasted peanuts
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 tsp plus a pinch of salt
- 1 Tbsp butter
- 1 tsp pure vanilla extract
- 1 tsp baking soda
Butter a large cookie sheet.
In a 2-quart glass mixing bowl or casserole dish mix together granulated sugar and corn syrup.
Microwave on high power for 4 minutes.
Stir in the peanuts and salt.
Microwave on high power for 4 minutes.
Mix in butter and vanilla stirring until butter is melted.
Microwave on high power for 2 minutes. The mixture will be a golden brown color near the end. If not, add an extra minute or two because the peanut brittle will be chewy, not brittle if undercooked. Microwaves do vary.
Stir in baking soda. (This is the fun part; it gets all foamy)
Quickly pour mixture on the greased cookie sheet and spread it as thin as you can.
Cool then break into pieces. Store in an airtight container or it will become soft.
