Ingredients

  • 1 1/4 cups unsalted roasted peanuts
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 tsp plus a pinch of salt
  • 1 Tbsp butter
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda

Instructions

  • Butter a large cookie sheet.
  • In a 2-quart glass mixing bowl or casserole dish mix together granulated sugar and corn syrup.
  • Microwave on high power for 4 minutes.
  • Stir in the peanuts and salt.
  • Microwave on high power for 4 minutes.
  • Mix in butter and vanilla stirring until butter is melted.
  • Microwave on high power for 2 minutes. The mixture will be a golden brown color near the end. If not, add an extra minute or two because the peanut brittle will be chewy, not brittle if undercooked. Microwaves do vary.
  • Stir in baking soda. (This is the fun part; it gets all foamy)
  • Quickly pour mixture on the greased cookie sheet and spread it as thin as you can.
  • Cool then break into pieces. Store in an airtight container or it will become soft.
