Sautéed Sugar Snap Peas or Beans

A quick and tasty side dish that is ready in less than 15-minutes.

Ingredients

  • 1 Tbsp olive oil
  • 1-2 Tbsp minced garlic
  • 2 oz lean ham cooked and cut into small pieces. (omit for vegan)
  • 2 lbs fresh sugar snap peas or green beans. Frozen is fine too.

Instructions

  • In a large electric skillet add about 1 Tbsp olive oil; heat it up between medium and high.
  • Add 1 heaping Tbsp minced garlic. Add 2 if you are like me and really like garlic!
  • Let cook about 3 minutes. Add finely chopped leftover ham, pork, turkey whatever you’ve got. Or go meatless. Cook another 2-3 minutes.
  • Add sugar snap peas or green beans and start tossing to cook evenly. Turn the heat up to high, but keep tossing so the veggies don’t burn.
  • Salt and pepper to taste as you toss. When the peas or beans are heated through…..dish is done and ready to serve. I like mine crunchy so sautéed to preferred doneness.
  • We eat large portions of vegetables, so our serving sizes might be larger than a standard measurement.
