Cassava Flour Nut Butter Cookies ~ Gluten-Free & Vegan

Super easy one bowl allergy-friendly nut butter cookies that have lots of options for add-in ingredients. These cookies are freezer-friendly and a crowd favorite.

Ingredients

  • 1 cup nut butter at room temperature ~ Substitute SunButter for nut-free
  • 1/4 cup unsweetened applesauce regular or cinnamon
  • 1 tsp vanilla extract
  • 2/3 cup sugar ~ do not sub with liquid sweetener
  • 1/4 cup plus 2 Tbsp Cassava flour ~ or other gluten-free blends
  • 1/4 tsp salt
  • 1 1/2 tsp baking soda
  • optional add-ins ~ see in notes

Instructions

  • Line a baking sheet with parchment paper or a silicone liner.
  • Add all ingredients except add-ins in a medium bowl. Mix well.
  • Stir in add-ins at this time.
  • Form balls using 2 tbsp of dough and place them on a lined baking sheet. Push down the balls to about half the size.
  • Bake for 10 minutes at 350. Let cookies rest for about 10 minutes before transferring them to a wire rack.
