Garlic Roasted Mushroom Appetizers
Delicious savory mushrooms roasted in garlic, butter, and thyme. Perfect appetizer or side to a barbecued steak. Roasted mushrooms also make a healthy snack.

- 36 Medium fresh white button mushrooms
- 2 tbsp or 2 cloves fresh garlic
- 2 tbsp Olive oil
- 4 tbsp Butter ~ or dairy-free substitute
- 1 tsp Dried thyme
- Semi soft sheep cheese ~ use a dairy-free cheese for vegan
- Salt & pepper to taste
- 2 tbsp Coconut aminos ~ optional add-in
Preheat oven to 450
Wash and dry mushrooms
Remove stems and place in a large mixing bowl
Add olive oil and garlic (and optional coconut aminos) and toss mushrooms around until all are covered in the mixture.
Place mushrooms on a large baking sheet with tops down.
Place cubes of sheep cheese in the center where the stem was removed.
Bake for 17-20 minutes or until lightly browned and cheese is melted.
Season with fresh grinds of pepper and salt.
