Sunflower Seed Butter and Oat Energy Balls

No bake easy energy balls made with creamy sunflower seed butter, oats, and pure maple syrup. A fun recipe for kids to help make too.

Ingredients

  • 1 1/2 cups old fashioned oats ~ gluten-free if needed
  • 2 Tbsp quinoa flakes
  • 3 Tbsp pure maple syrup
  • 1 1/8 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup plus 2 Tbsp sunflower seed butter
  • 2-3 Tbsp unsweetened coconut
  • 2-3 Tbsp macadamia nuts crushed ~ omit for nut-free
  • 2-3 Tbsp semi-sweet mini chocolate chips ~allergy-friendly if needed

Instructions

  • Mix everything except macadamia nuts and chocolate chips in a food processor. Mix well. Gently mix in macadamia nuts and chocolate chips being careful not to completely chop up the chocolate. I often transfer my mixture from the food processor to a bowl and stir in the chocolate chips.
  • Form balls using about 1 1/2 Tbsp of dough. Eat right away, chill, or freeze.

Notes

Option for serious chocolate cravings:
Melt some chocolate chips in a bowl on low in the microwave and dip chilled balls one at a time. Freeze to set chocolate and enjoy a super delicious chocolate covered energy ball.
