GF Oat Banana Bites with Nut Butter

- 3 bananas pureed or equal to 1 1/2 cups puree (a hand blender works great)
- 1 1/2 tsp vanilla
- 1 cup old fashion oats gluten-free if needed
- 1 cup oat flour ~ grinding your old-fashioned oats in a blender or food processor works great.
- *Use gluten-free oats if needed.
- 3 Tbsp Quinoa Flakes
- 1 tsp baking powder ~ corn-free if needed (notes)
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 3 Tbsp chopped nuts ~ omit for nut-free I used walnuts.
- 1/4 cup mini semi-sweet chocolate chips. I used Enjoy Life Semi-Sweet Mini Chocolate Chips.
- 1/4 cup dried goji berries. Or raisins if you prefer.
- Nut butter of choice ~ Sunflower seed butter for nut-free
Preheat oven to 350. Line baking sheets with parchment paper or silicone liners.
In a small mixing bowl combine pureed bananas and vanilla. Set aside.
In a medium mixing bowl, add oats, oat flour, quinoa flakes, baking powder, cinnamon, salt, nutmeg, and allspice.
Mix together. Add banana mixture to oat mixture. Stir to combine. Add nuts, chocolate chips, and goji berries. Stir well.
Using a small cookie scoop drop mounds onto prepared baking sheets. About 2-tablespoons each. Bake for 10-13 minutes, depending on the size of the cookie. They will be slightly firm when done.
Remove from the oven and let sit for a couple of minutes before transferring to a cooling rack. Spread about 1/2 Tbsp of any nut butter over each cookie, like frosting or leave them plain.
