Garlic Roasted Mushroom Appetizers

Delicious savory mushrooms roasted in garlic, butter, and thyme. Perfect appetizer or side to a barbecued steak. Roasted mushrooms also make a healthy snack.

Ingredients

  • 36 Medium fresh white button mushrooms
  • 2 tbsp or 2 cloves fresh garlic
  • 2 tbsp Olive oil
  • 4 tbsp Butter ~ or dairy-free substitute
  • 1 tsp Dried thyme
  • Semi soft sheep cheese ~ use a dairy-free cheese for vegan
  • Salt & pepper to taste
  • 2 tbsp Coconut aminos ~ optional add-in

Instructions

  • Preheat oven to 450
  • Wash and dry mushrooms
  • Remove stems and place in a large mixing bowl
  • Add olive oil and garlic (and optional coconut aminos) and toss mushrooms around until all are covered in the mixture.
  • Place mushrooms on a large baking sheet with tops down.
  • Place cubes of sheep cheese in the center where the stem was removed.
  • Bake for 17-20 minutes or until lightly browned and cheese is melted.
  • Season with fresh grinds of pepper and salt.

Notes

Halloumi Sheep Cheese is the brand I used in my recipes.
