Perfectly Pumpkin Oat Cookies
Perfectly pumpkin oat cookies are gluten, dairy, and egg-free. They are nicely balanced with fall spice flavors and soft to bite into. Another way to enjoy this recipe is to substitute pureed sweet potato for the pumpkin.

Ingredients
- 1/2 cup Dairy-free butter substitutes like Country Crock Plant Butter softened or Coconut oil (melted)
- 1/2 cup Sugar ~ beet sugar is also an option
- 1/4 cup Dark brown sugar
- 1/2 cup Pumpkin puree
- 1 + 1/2 tsp Vanilla extract
- 1 tbsp Mild molasses
- 1 + 1/4 cups Gluten-free flour blend like King Arthur Measure-For-Measure Gluten Free Flour
- 1 + 1/2 cups Gluten-free old-fashioned oats
- 1/2 tsp Baking soda
- 2 tsp Pumpkin pie spice ~ try my homemade version
- 1/4 tsp Salt
- 3/4 cup Mini semi-sweet chocolate chips ~ Enjoy Life are an allergy-friendly brand
- 1/2 cup Raisins ~ optional but an excellent combination with the chocolate and pumpkin flavors
Instructions
- Preheat oven to 350 degrees F.
- Line baking sheets with parchment paper or silicone liners.
- In a large mixing bowl add softened dairy-free butter or melted coconut oil with granulated and brown sugar. Mix until smooth and creamy.
- Add pumpkin, vanilla, and molasses. Mix thoroughly.
- Add flour, baking soda, pumpkin spice, and salt. Mix on low speed or stir to combine.
- Fold in chocolate chips and raisins or whatever you decide as an add-in.
- Drop 2 tablespoons of dough onto the prepared baking sheets.
- Slightly flatten the cookie dough mounds and bake for 12- 13 minutes.
- Remove cookies from oven and let cookies rest 3-5 minutes before transferring to a cooling rack.
- If you want to frost the cookies wait until they reach room temperature.
