Ingredients

  • 1/2 cup Dairy-free butter substitutes like Country Crock Plant Butter softened or Coconut oil (melted)
  • 1/2 cup Sugar ~ beet sugar is also an option
  • 1/4 cup Dark brown sugar
  • 1/2 cup Pumpkin puree
  • 1 + 1/2 tsp Vanilla extract
  • 1 tbsp Mild molasses
  • 1 + 1/4 cups Gluten-free flour blend like King Arthur Measure-For-Measure Gluten Free Flour
  • 1 + 1/2 cups Gluten-free old-fashioned oats
  • 1/2 tsp Baking soda
  • 2 tsp Pumpkin pie spice ~ try my homemade version
  • 1/4 tsp Salt
  • 3/4 cup Mini semi-sweet chocolate chips ~ Enjoy Life are an allergy-friendly brand
  • 1/2 cup Raisins ~ optional but an excellent combination with the chocolate and pumpkin flavors

Instructions

  • Preheat oven to 350 degrees F.
  • Line baking sheets with parchment paper or silicone liners.
  • In a large mixing bowl add softened dairy-free butter or melted coconut oil with granulated and brown sugar. Mix until smooth and creamy.
  • Add pumpkin, vanilla, and molasses. Mix thoroughly.
  • Add flour, baking soda, pumpkin spice, and salt. Mix on low speed or stir to combine.
  • Fold in chocolate chips and raisins or whatever you decide as an add-in.
  • Drop 2 tablespoons of dough onto the prepared baking sheets.
  • Slightly flatten the cookie dough mounds and bake for 12- 13 minutes.
  • Remove cookies from oven and let cookies rest 3-5 minutes before transferring to a cooling rack.
  • If you want to frost the cookies wait until they reach room temperature.
