Peanut Butter Maple Date Bites

Peanut Butter Maple Date Bites are like candy…except healthier.

I was showing my husband one of my favorite snack foods, a date filled with peanut butter when I suddenly got the idea to dip the end of my date in maple butter. I probably don’t have to tell you how insanely delicious that was!

I didn’t stop there; next, I combined the maple butter with some peanut butter, which made a soft yummy nougat.  My taste buds literally started doing summersaults…well, I’m pretty sure they wanted to.

Having leftover chocolate drizzle is quite common in my kitchen, so of course, I had to take these little date bites one step further. Now I can’t decide if I like dipping the ends of the dates in the chocolate or drizzling the chocolate over the top.

I had some leftover peanut butter and maple mixture, so I made some little balls.  I dipped those little treasures into the chocolate too, and for a minute, I felt like I was at the Sees Candy Store. Definitely one of my favorite places!  : )

Form small balls using about 1/2 tablespoon of the nougat and dip them in the melted chocolate coating. Set them aside or refrigerate until the chocolate is firm.

The measurements of maple butter and peanut butter can vary; it’s not a number that is set in stone.

For example:
Use either 2 tablespoons maple butter with 1 tablespoon peanut butter OR 2 tablespoons peanut butter with 1 tablespoon maple butter.

1/2 cup Semi-sweet Chocolate Chips Or Allergy-Friendly Chocolate Chips like Enjoy Life Allergy Friendly Semi-Sweet or Dark Chocolate Chips.
1 tsp coconut oil
Chocolate free is an option too

Instructions:

Cut dates in half and set them on a cookie sheet covered with wax paper.

In a small bowl, mix 2 parts maple butter with 1 part peanut butter, or mix 2 parts peanut butter with 1 part maple butter. I suggest trying it both ways and see which combination you prefer.

Take about 1/2 Tbsp of the maple butter mixture, roll it into a log shape, and place it on top of the cut side of the date. Push down gently, so the maple mixture doesn’t fall off. Set aside until you’re ready to dip or drizzle with melted chocolate.

To make a peanut butter maple ball use the same amount of maple mixture or more if you like. Form a ball and set it aside until ready to dip into the melted chocolate.


When you are ready, prepare the chocolate for dipping:

Heat chocolate chips and coconut oil in the microwave for 1 minute at 50 percent power; stir and repeat until all is melted and uniform.

Drizzle over your date bites or dip one end into the chocolate

If you end up with extra peanut butter and maple filling, shape it into a log and refrigerate it. Then slice off bites whenever a craving hits!  Leftover melted chocolate can be saved as well in an airtight container. Heat up to use anytime.
