Nearly No-Fat S’more Brownies ~ Reduced sugar option
If you love rich chocolate, soft gooey brownies, and s’mores, I’ve got just the recipe for you! Oh, and did I mention these s’more brownies have less than half the fat of regular brownies?

Just what makes this rich chocolate nearly no-fat brownie so soft and gooey? The mini marshmallows and instant coffee are my two magic ingredients in these irresistible brownies.
The coffee enhances the chocolate, and the marshmallows make these brownies a whole new soft and gooey extravagance. Let’s say these are a cross between a brownie and heaven.
This is an incredibly simple recipe that goes together in a snap. The hardest part is waiting to eat them.
I added my own favorite frosting to half the brownies and left the other half unfrosted. The frosting is made from peanut butter and semi-sweet or dark chocolate chips, and it’s to die for! You can also use this combination as a delicious drizzle for cookies, brownies, and baked donuts too. Of course, this adds a little extra fat to the brownies, to be exact, 2 grams per teaspoon. But seriously…it’s worth it! I like to drizzle this frosting over my s’more brownies.
In case I haven’t mentioned this before, my husband likes chopped nuts on just about every dessert that enters his mouth. Nuts are not added to the fat grams in the nutritional information.
Just melt the peanut butter and chocolate in the microwave on medium heat until completely melted and stir to combine.
Substituting Types Of Sweeteners Is No Problem:
- Regular granulated sugar
- Beet sugar
- Monk Fruit Sweetener
- Half regular and half Monk Sweetener
Monk fruit sweetener is a sugar substitute that cooks and bakes just like sugar. It is made from monk fruit, a small melon like fruit, and has zero calories and carbs.
Remember…coffee enhances the flavor of chocolate. Therefore, I added less than one teaspoon of instant coffee grounds for a richer chocolate brownie. This is optional…but delicious.

~ 12 servings without frosting = 5 points each.
~12 servings with 1 tsp of frosting = 5.5 points each.
~12 servings with monk sweetener = 3 points each.
To Make Nearly No-Fat S’ more Brownies, You Will Need These Ingredients:
- Gluten-free flour blend that includes xanthan gum or guar gum. I suggest King Arthur Gluten-Free Measure for Measure or Pamela’s Gluten-Free All-Purpose Artisan Blend.
- Unsweetened cocoa powder
- Baking soda
- Salt
- Instant coffee grounds
- Water
- Beet sugar; regular granulated sugar is fine too.
- Mashed banana
- Nut butter of choice; I prefer almond or peanut butter
- Vanilla extract
- Semi-sweet allergy-friendly chocolate chips or mini semi-sweet chocolate chips. I used Enjoy Life Dark Chocolate Morsels, which are allergy-friendly.
- Mini marshmallows or Dandies All Natural Mini Marshmallows for vegans
- Mini chocolate chips to sprinkle over the top before baking.
- Chopped nuts to sprinkle on top ~ optional
Try This Dreamy Frosting or Drizzle:
In a small microwave-safe bowl, add equal parts of chocolate chips and peanut butter or another type of nut butter. Set microwave on medium power and melt, stirring until completely melted. Drizzle or frost room temperature brownies.
Nearly No-Fat S'more Brownies
Ingredients
- 1 cup gluten-free flour blend that includes xanthan gum or guar gum. I suggest King Arthur Gluten-Free Measure for Measure or Pamela's Gluten-Free All-Purpose Artisan Blend
- 1/4 cup plus 2 tbsp unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 tsp instant coffee grounds
- 2/3 cup water
- 2/3 cup beet or regular granulated sugar
- 1/3 cup mashed banana
- 1/4 cup nut butter of choice; I prefer almond or peanut butter
- 2 tsp vanilla extract
- 1/4 cup semi-sweet allergy-friendly chocolate chips or mini semi-sweet chocolate chips. I used Enjoy Life Dark Chocolate Morsels which are allergy-friendly.
- 3/4 cup mini marshmallows or Dandies All Natural Mini Marshmallows for vegans
- 1-2 Tbsp mini chocolate chips to sprinkle over top before baking.

Instructions
- Preheat oven to 350
- Prepare an 8"x8" pan with parchment paper.
- In a medium mixing bowl combine the first 5 ingredients. Mix well.
- In a small bowl add water, sugar, mashed banana, nut butter, and vanilla. Mix well.
- Combine mixtures in a medium mixing bowl and mix well with a spoon.
- Fold in chocolate chips and marshmallows.
- Pour into prepared pan and sprinkle with mini chocolate chips if desired.
- Bake brownies for 30-35 minutes.
- Let cool to room temperature before cutting for best results. They will firm up as they cool.
- Store leftovers in the refrigerator or freezer.
