Lots-A-Oats Healthy Banana Muffins ~ Grain-free & heart healthy

It’s true; lots-a-oats healthy banana muffins are grain-free, heart-healthy, and very low-fat. But guess what? These oat and banana muffins are so darn good no one will ever guess they are low-fat.

I’m an oat and muffin lover that’s for sure. If you were to ask me to recommend a healthy muffin to try…this would be the one!!

I can’t decide if I like them better fresh or the next morning.

These heart-healthy muffins are so soft and tender you will be shocked to know there is only one tablespoon of coconut oil in the entire recipe. Your friends will think you are a magician in the kitchen.

And as always I love having a great recipe for my spotted bananas!! It’s even better when it’s a healthy recipe.

~raisins
~mini allergy-friendly semi-sweet chocolate chips
~dried blueberries
~dried cranberries
~unsweetened coconut
~dried pineapple

Fun drizzles to add over the top of the muffins:
 ~melted chocolate chips
~ warm peanut butter
~powdered sugar icing
~warm maple butter

Weight Watcher points are 6 for each muffin omitting chopped nuts and chocolate chips. You could always make mini muffins at 3 Weight Watcher points each.

To Make Lots-A-Oats Healthy Banana Muffins You Will Need These Ingredients:

  • Oat flour ~ gluten-free if needed. You can make your own in a blender or Vitamix.
  • Baking powder ~ corn-free if needed
  • Baking soda
  • Salt
  • Hemp seeds
  • Walnuts ~ omit for nut-free
  • Bananas
  • Coconut oil
  • Brown sugar
  • Vanilla
  • Mini semi-sweet chocolate chips ~Allergy-friendly if needed like Enjoy Life Mini Semi-Sweet Chocolate Chips

Store in an airtight container or in the freezer for longer storage.

A deliciously tender grain free (oat) banana muffin that has just 1 tablespoon of coconut oil.

Ingredients

  • 2 cups oat flour gluten-free if needed~ I often make my own in a blender or Vitamix.
  • 1 1/2 tsp baking powder ~ corn-free if needed
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp hemp seeds
  • 3 Tbsp finely chopped walnuts omit for nut-free
  • 3 ripe spotted bananas ~ mashed
  • 1 Tbsp oil I used coconut oil
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • ¼ cup mini semi-sweet chocolate chips I used allergy-friendly Enjoy Life Mini Semi-Sweet Chocolate Chips.

Instructions

  • Preheat oven to 350
  • Prepare muffin pan with silicone or paper cups or a non-stick spray.
  • In a medium-size mixing bowl add oat flour, baking powder, baking soda, and salt. Mix well.
  • In a small mixing bowl add mashed bananas, brown sugar, vanilla, and oil. Beat until creamy, about 1-2 minutes.
  • Add banana mixture to oat mixture and stir to combine.
  • Fold in chopped nuts, hemp seeds, chocolate chips. Spoon into muffin pan about ¾ full.
  • Bake for 20-22 minutes.  Bake mini muffins for 12-15 minutes.
  • The muffins should spring back when lightly touched.
  • Store in an airtight container or in the freezer for longer storage.
