Healthy Coconut Monster Blondies
I might as well break the news about a super healthy ingredient in these healthy coconut monster blondies, garbanzo beans. Yup, but your taste buds would never know it, and neither will anyone else.

Truth be told, M&Ms are one of my favorite candies, and that’s why you see them on so many of my desserts and treats. The bright colors are cheery and fun, making dessert or snack time a little more special.
Try these healthy cookie bars frozen, too, because they become a sensational chewy treat, yet still pretty darn healthy! Adding a scoop of ice cream, frozen yogurt, or a non-dairy substitute like SoDelicous on top is one of my favorite desserts.

For an allergy-friendly option, coconut monster blondies can be made with mini or regular-size M&Ms or Choco No Nos. Of course, you can skip the candies altogether and add extra chocolate chips.

- Garbanzo beans ~ also known as chickpeas
- Honey, agave, or pure maple syrup
- Peanut Butter or any nut or seed butter
- Vanilla extract
- Baking soda
- Baking powder ~ corn-free if needed
- Salt
- Oat flour
- Unsweetened coconut
- Semi-sweet chocolate chips ~ Allergy-friendly if needed, like Enjoy Life Semi-Sweet Chocolate Chips.
- Plain M&Ms or Choco No Nos to add on top
Healthy Coconut Monster Blondies
Ingredients
- 15 oz can garbanzo beans chickpeas, drained and rinsed (save the liquid if you do egg-free baking with aquafaba)
- 1/4 cup plus 1 Tbsp honey agave, or pure maple syrup.
- 1/2 cup peanut butter almond butter, or SunButter.
- 1 1/2 tsp vanilla
- 1/4 tsp baking soda
- 1/4 tsp baking powder ~ corn-free if needed
- 1 Tbsp oat flour
- 1 1/2 Tbsp unsweetened coconut
- 1/4 tsp salt
- 1/2 cup semi-sweet mini or regular chocolate chips ~allergy-friendly if needed
- 30 M&Ms or Choco No Nos
Instructions
- Preheat oven to 350. Line an 8x8-inch baking pan with parchment paper.
- Add rinsed and drained garbanzo beans, honey, peanut butter, and vanilla to a food processor. Blend until smooth.
- Add salt, baking soda, baking powder, and oat flour, and blend to mix well.
- Stir in the coconut and 1/3 cup of the chocolate chips.
- Spread dough into the pan and top with remaining chocolate chips and M&Ms.
- Bake for 25-28 minutes. Cool 20 minutes on a wire rack.
- Cut into squares. Store in the refrigerator or freezer.
